ProteaseCW™ targets peptide bonds prevalent in dairy proteins, hydrolyzing both micellar caseins and globular whey proteins into shorter peptides and amino acids. Casein’s structured micelles and whey’s compact folds can resist nonspecific cleavage; a targeted protease increases the rate at which these proteins are opened and fragmented. The resulting peptides present optimal substrates for exopeptidases, facilitating thorough dairy protein utilization.*
